During the project, a novel, innovative snack consisting mainly of vegetables and fruits will be developed. It should have desirable nutritional values, consist of regional resources and is produced an marketed by Thuringian enterprises. In kitchen-scale experiments, the recipe of this snack shall be developed. Every batch will be evaluated according to it's nutritional values as well as it's sensorical properties. The best products will be upscaled to industrial scale. Moreover, within the project, supply chains for sustainable production of the snack will be established. The best products will be prepared for sale and marketing (i.e. development of packaging, establishment of shelf life) and a distribution strategy will be devised. Finally, first advertisement campaigns will be carried out.
