With a multi-perspective and transdisciplinary approach, the OPG develops appropriate strategies to increase the regional organic share in state-owned canteens to 30-40% by 2030, and to reduce food losses. In the OPG the entire value chain is represented. The project aims at closking the gap between regional organic agriculture and out-of-home consumption by orienting processing to specific market needs and developing expanded sales markets for selected vegetables (carrot, potato, pumpkin, lentil) in the districts of Lake Constance, Ravensburg and Constance. Following market and potential analyses, the core of the project will involve participatory research into where optimization potential lies. Services and innovative technical processes will be partially realized as prototypes in the project. Concrete recommendations are expected on how more of these regional organic products can be used in out-of-home consumption in the future.
