Purpose of research: Basic research
Until now, the data collected with the analytical methods available and validated for furan have not been sufficient but are required for the health evaluation and to take measures for risk reduction by establishing maximum levels for food control. Furthermore food will be analysed for other process induced toxicants. Data thus obtained will be used for assessing the impact on consumers.
Initially, BfR has carried out a proficiency test for furan in food in cooperation with the BVL. In this study the FDA method was applied by most of the participants. First experiments have shown furan with a continuously formed concentration that could be measured consecutively from the same coffee sample. To evaluate these findings, further experiments focussed on the development of alternative methods These activities will be continued and expanded.
