Purpose of research: Applied research

Edible oils have great importance in the diet of the population in China and in Germany. In this context the quality and authenticity of edible oils are of great concern and methods to verify quality and authenticity are essential in the framework of preventive consumer protection. In the present project edible oils of known type and origin should be investigated regarding the composition by means of different analytical methods established at the OCRI and the MRI. Depending on the extraction method a comprehensive picture of the composition will be obtained (metabolomics). As analytical methods ultra high pressure liquid chromatography-high resolution mass spectrometry (UHPLC-HR-MSn), headspace comprehensive two dimensional gas chromatography/time of flight mass spectrometry, near infrared spectroscopy, electronic nose, combined with different classical analytical methods as well as sensory evaluation should be used. Based on the data concerning the composition of the oils compounds that can give information regarding the quality and authenticity should be extracted by different statistical (chemometric) methods. The information on the composition of the edible oils will be recorded in a database to get more information about the variability of the components.
