Climate change requires adjustments in wheat cultivation so that future yields and quality can be stabilized through targeted measures. This not only strains the performance of the cultivated wheat varieties, but also adversely affects the baking quality, as yield and quality influence each other (high yield = lower baking quality). Against this background, farmers face the difficulty of choosing the right varieties every year. From a scientific point of view, there are various possibilities and instruments available with which a sustainable assurance of the baking quality can be achieved. There is only a lack of practical implementations in the form of concrete applications in agriculture. Firstly, this project aims to adapt the yield performance of eco-line varieties and eco-wheat populations better to climate change by means of an innovative selection method. Secondly, mixtures of varieties with improved baking quality are to be tested. To ensure the baking quality of high yielding wheat, a non-destructive near-infrared spectroscopy (NIRS) method for grains based on the parameter gluten quality for the detection of baking quality is being developed.
