In the project 'Analysis of the influence of a sustainable and ecological husbandry of laying hens on egg quality using 1H-NMR spectroscopy', a quality assurance method for the authenticity and quality of eggs, especially organic eggs, is to be developed. In this context, the focus will be on the type of husbandry of laying hens. In addition, other influencing factors such as feeding, origin and race must also be taken into account, as these can also have an influence on the egg matrix. NMR spectroscopy will be used to detect changes in the metabolome (sum of metabolic products), to identify dependencies on various factors influencing the egg, and to evaluate possible correlations between egg quality and metabolome. This project contributes to the assurance of authenticity and product quality of eggs and in particular to the support of producers of eggs and egg products from organic farming. It is a project with a very high practical relevance, as the results generated and the NMR method directly help the producer to guarantee the desired product quality and authenticity, but at the same time have a strong impact on the sustainability of these products, e.g. animal welfare. The project is divided into four work packages (APs). In AP1, the authentic samples with all parameter variations are collected. Method development for sample preparation and measurement takes place in AP2. Subsequently, all samples are measured according to the method developed in AP2 (AP3). The data evaluation, the knowledge transfer and the completion of the method takes place in AP4. At the end of the project, a reliable quality assurance method for the authenticity of eggs is available.
