Collaborative project: From nose to tail in communal catering Strengthening urban-rural partnerships with the provision of meat from organic gras-fed beef. Coordination (GanzTierStark)
Project
Project code: 2819OE015

The project contributes to an increase in the provision of meat of gras-fed organic beef to communal canteens. There will be a focus on 'nose-to-tail-strategies' which require adjustments of canteen processes (e.g. selection of suppliers, amonunt of offered meat in meals, adapted menu creation). Assuring the quality of the organic beef along the added value chain as well as the necessary quantities and compatability with legal and organisational requirements affords the development of reliable urban-rufal partnerships.
