An increasing number of small flocks of laying hens are being observed by organic associations and in the evaluation of investment support in rural development programmes, particularly among direct marketers or newcomers to laying hen farming. It can be assumed that this development will increase the existing quantity of non-marketable eggs (dirty and cracked eggs as well as eggs of weight class S) on organic and conventional farms. Little information is available on the utilisation of these eggs. The planned project is intended to close this information gap. It consists of two stages: in the first stage, the volume and the current utilisation strategies of the non-marketable eggs are to be surveyed both in conventional and in organic farms with small laying hen units (between 100 and 3,000 laying hen places) (status quo analysis). In conventional farms, only free-range farming is considered. In a second step, particularly sustainable utilisation strategies are identified on the basis of a catalogue of criteria. The results of the project will be incorporated into a practice handbook with a description of possible utilisation strategies for non-marketable eggs.
