At the end of 2018, the BMEL concluded a voluntary agreement with associations of the German food industry on the reformulation of product recipes (National Reduction Strategy). The organic sector is not yet in the focus of this discussion. In the future, however, organic foods will also be critically questioned with regard to their health-promoting composition. The ReformBIO project analyses how the organic food industry can strategically position itself in this debate and how organic products can be optimised in terms of sensory characteristics. It thus contributes to the expansion of the organic market through successful health positioning. The aim of the project is to develop and test an own reformulation strategy for the organic sector. In a total of six work packages, consumer expectations and various forms of product labelling will be analysed for specific target groups. Possible interactions of an extended nutrition labelling with the Nutri-Score are also considered. First, a qualitative study on consumer expectations is carried out, followed by two representative surveys on expectations and implementation assessments. In addition, in cooperation with business practice, various sensory-technological implementation options are tested for various product groups using the example of sugar reduction, using comparative expert panels and consumer tests. As a result, the project aims to derive recommendations for the health positioning of organic suppliers and to develop concrete implementation and communication recommendations for the organic sector.
