While cyprinids are tasty, they contain a large number of fine bones that make their processing and consume difficult. Consumers therefore avoid these species, alltough they contribute to a large part of the catches in inland fishery in Northern Germany. Therefore new initiatives are needed that will increase interest in processing cyprinids and support their marketing. The aim of the project is to show different possibilities for the utilization of caught cyprinids, in particular as a regional resource for high-quality food.
