The transmission and spread of food-associated pathogens along the food chain is a complex process. Even before plant and animal food is obtained, pathogens can be introduced into stocks and multiply. In the subsequent stages of food production, a spread to the food is possible. In the subsequent processing steps, there is also the risk of new pathogens from the process environment or from the persons involved in the processing being introduced into the food. In this project, microbiological hygiene and safety of food is investigated at different stages of the food chain. A particular focus is on novel processes.
