To facilitate the work of winemakers, cellarers, cooperatives, traders and sommeliers, PINOT supports the human perception of nose, tongue and mouth with sensors and artificial intelligence. PINOT complements human perception with reproducible measured values that reflect the relevant sensory parameters. The measurements are made with sensors and the digitally available data are translated with artificial intelligence into metrics for grapes, must and wine. These metrics are designed in such a way that recommendations for action can be derived for winemakers and cellar masters. Furthermore, the measurements and metrics are translated by means of artificial intelligence into texts that describe the taste of wine in a way that is comprehensible to humans. Dealers are thus supported in detecting faulty deliveries or fraud more reliably and easily. Vorhabenziel (Englisch): Thus, the goals of the project are on the one hand the research of suitable digital sensor systems, which can be used in the field or in trade as mobile handheld devices and in the cellar or trade as laboratory systems. On the other hand, software systems will be prototypically created, which can document and analyse the measured values. Furthermore, PINOT implements software systems which translate the measured values into suitable metrics and texts using artificial intelligence. This makes it possible to digitally capture the taste of wine along the entire wine production chain, from the grape to the consumer, and PINOT paves the way for future research and optimization of these work processes.
