The project will develop scenarios for the consistent use of the Internet of Things and artificial intelligence (AI) along the food supply chain, from production to the consumer, to achieve significant improvements in the areas of consumer protection and information, monitoring of food quality and safety, and in terms of a possible reduction in food waste. The project achieves these objectives on one hand through the intelligent, self-learning of classic quality and safety data; on the other hand, through the use of innovative measurement methods: mass spectrometry, next generation gene sequencing, Raman, infrared and fluorescence spectroscopy as well as microgas sensors. These methods will be examined in the project with regard to their practicality in the field of meat. The potential added value of linking the methods within the framework of an intelligent, multi-variant evaluation is being investigated. Implications for food law are investigated in this context. Potential scenarios for the future will be developed together with a panel of experts in food practice. Selected scenarios are implemented in practice as an example within the framework of a future laboratory and evaluated in terms of their practicality, legal impact, costs and added value. The scenarios and the results of the Future Laboratory will be published as a white paper in the context of a project conference.
