The market for organically produced maize for human consumption in Germany shows untapped potential. Maize is a gluten-free food crop, low in histamine and rich in vitamins (of the B and E complex) and minerals. However, maize processors in Germany currently place hardly any demands on their raw material in terms of nutritional quality and consequently do not rely on health benefits of maize in their marketing efforts. The main objective of the project 'SpeiseMaisQual' is to close knowledge gaps in connection with processing and nutritional qualities of locally grown organic maize for human consumption in Germany. Thus, the prerequisites for the improvement of the availability and quality of locally produced organic maize shall be established. The following measures will be implemented in three work packages (WP).
