Purpose of research: Inventory & Assessment
Current scientific findings suggest that the requirements of various food retailing companies for fruit and vegetables go beyond the legally binding requirements and thus provoke food losses in the supply chain. However, which specific requirements lead to which losses has not yet been sufficiently researched. The aim is to conduct a study that analyses the quality standards currently applied by a food retailing company for fruit and vegetables (e.g. with regard to appearance, sensory characteristics and calibre) as well as practices (e.g. exclusive supply contracts, communication) with regard to resulting food losses. In the context of the study, a quantification of the losses of exemplary fruit and vegetable crops is carried out.
