Creation of a cross-stage and scalable value-added chain concept for unweaned calves from dairy farming by developing an offer for the end consumer of regionally and animal-friendly produced beef, taking into account the entire value chain. The aim of the project is a higher added value for calves and feeders born in Baden-Württemberg and thus an incentive to raise the calves in the state. - By achieving a higher price in the final product (beef) - Through developing and establishing a value-added concept that will increase the end consumers willingness to pay through regionality, animal welfare, meat quality and authenticity.
Implementation: Through a dialogue between the milk producer (calf producer), the fattening farms, the marketers, the slaughterhouses and the food retrailer to work on and solve problems and issues that arise during the establishement of the value chain concept. From the processor to the fattening farm and back again to the dairy farm, a line of communication must be established that will ultimately bring a product to market that can serve all consumer needs.
