The FruVaSe project, subproject 2 of the Erfurt University of Applied Sciences is part of a research consortium with partners in Germany, Tanzania, Uganda and Kenya, in which processing technologies are being developed to produce new, marketable products of selected fruits and leafy vegetables and to extend their shelf life. The University of Applied Sciences Erfurt will integrate the developed technologies for fruit and vegetable processing into a resource-efficient, energy-autonomous, cyclical system approach (water-energy-waste-food Nexus). The aim is to use renewable energies from the production process. Based on biomass and photovoltaics, a balanced management system will enable the use of organic waste as well as water purification and reuse in a closed loop system.
