The sub-project aims to identify the main reasons for quality changes in Baobab raw materials, intermediate and commercial end products, taking into account the local value chain. Based on the observed knowledge, appropriate technological measures for shelf life prolongation and enhancement of product safety shall be developed. Another focus is on the development of a rapid method for assessing the degree of maturity or selected quality features.
