Purpose of research: Experimental development
The aim of the project 'OptoWa' was to enhance the degree of automatisation and hygiene of the product treatment by using a digitally controlled high pressure water jet. The main activities have been the identification and integration of the major components of the system, the development of the software to control the cutting process and the determination of the cutting and peeling parameters. The peeling process using image analysis and digital control led to high quality products. The losses in fruit material could be minimized. Tests showed, that slices and figures could be cut with high accuracy. The surfaces of apple slices showed significantly reduced browning compared to slices cut conventionally. Further activities for improvements of the system are the development of a prototype with an automatic feed and handling system for fruits and the use of the system with other products than apples. The acceleration of the process is a further objective of future activities.
