Purpose of research: Applied research
Examination of the influence of different matrices on the diffusion behaviour of low molecular digestion products and (unwanted) food constituents after digestion. For this purpose different protein-, fat- and starch-containing real and model foods are being chemically-enzymatically digested and the diffusion of constituents is investigated after the chyme is treated with pancreas enzyme and bile.
