Purpose of research: Basic research
The aim of this research project is to investigate the bioprotective effect of selected lactic acid bacteria in mild delicatessen salads and to improve microbial safety and shelf life of these products. In addition it is planned to use the protective cultures in combination with natural antimicrobial substances such as nisin or chitosan.
