'This project is different, currently debated practices of alcohol reduction applied to German conditions, verified and hinsichltich assess their qualitative benefit. At the same time an attempt is made through a network viticultural, microbiological and cellar of economic measures to show the wine producers with a holistic approach to the influence of alcohol content . This approach also includes the aspects of the consumers who ultimately make the decision to buy what wine to which alcohol and drink it. for the law requires scientifically sound data are generated as a political decision-making tool for any necessary legislative changes.
According to the Chapter II presented oenological practices are influenced by the the Department of Enology available resources following seven work packages: sugar reduction in the must with Reduxverfahren, adding water in the cider, water additive in wine, alcohol reduction with reverse osmosis and distillation, alcohol reduction using osmotic evaporation, alcohol reduction Spinning Cone Column means, trial technical question on a laboratory scale. The trials are the first two years with three white wines and 3 Year are carried out with addition of a red grape. Further experiments carried out in cooperation with partners at the DLR Mosel. '
