Purpose of research: Applied research

"In this research project resource-saving biotechnological and process engineering processes for the production and utilisation of efficient microbial cultures for dairy products were developed employing optimal preconditioning, activity boosters, protective agents, optimized culture conservation and storage. The optimal preconditioning based on an alkaline stress (pH 9, 60 min) or a mild sublethal pressure shock (350 MPa, 10 min) followed by a repair phase (60 min) enhances the expression of stress and repair mechanisms (biomarkers) in Lb. paracasei subsp. paracasei F19 and thus can contribute to the increase and efficiency of starter cultures. Activity boosters were identified and characterized in terms of their growth behaviour and increased activity on proteome level. An economical fermentation medium based on yeast extract was developed. For improvement of drying resistance, suitable protectants and protectant combinations were found. The adaption of process parameters further led to short drying times with at the same time high survival rates. These results enable our industrial partner to use new biotechnological and process engineering processes for the production and utilisation of efficient fermentation organisms for material synthesis, customer-specific adaptation and expansion of the product range."
