Purpose of research: Applied research
The aim of the research is to fractionate new Czech and German barley varieties in milling processes and to investigate the individual milling fractions with respect to their fiber contents (beta-glucans and arabinoxylans). Moreover, the physico-chemical properties of these polysaccharides such as the molar mass distribution and viscosity will be determined. In addition the potential of high-fiber barley milling-fractions for bakery products will be investigated.
