Collaborative project: Development of an automatic measuring method by spectrometry technique for the detection of abnormal taste of boar meat - subproject 3
Project
Project code: 2817203713
Contract period: 01.11.2014
- 29.02.2016
Budget: 163,973 Euro
Purpose of research: Experimental development
Aim of the project is to develop a process analyses schema to detect automatically boar taint during the slaughtering process. The spectroscopic measurement techniques should be the base for the detection. In a first step developments for the optical sensors and spectrophotometers are necessary. In the second step field test in comparison with industry robots will be done as well as automatically specific software applications should be programmed. The development based on high-resolution spectroscopic tests which show the relations between the concentrations of boar taint relevant substances like skatole, indole and androstenone. Furthermore data from the AutoFOM analysis and sensoric panel will complete the basis data for the development of the process analysis schema. These data pool should lead to the high level process software by a multivariate data modelling to the separation of carcasses with abnormal boar taint in the slaughter line. The measurements in the slaughter line will be done by industrial robots.
