Purpose of research: Applied research

Fresh fruit and vegetables as well as foods made thereof contain a broad spectrum of compounds like sugars, amino acids, organic acids, phenolics or sterols. The entirety of the compounds in the fruit or the respective food forms the metabolite profile. The composition of this profile and the concentrations of the individual compounds may depend on several factors, as the variety, weather, growth manner, degree of maturity, storage conditions or the processing procedure. With the help of untargeted analysis methods like the comprehensive two-dimensional gas chromatography-mass spectrometry (GC×GC-MS) which has been established at the MRI Karlsruhe, a significant part of the metabolite profile can be characterized. This makes it possible to reveal coherences between the chemical composition of a crop or a food on the one hand and quality parameters like storability, taste or allergenicity on the other hand. Furthermore, the metabolite profile is a quality parameter by itself, as it also comprises quality determining constituents. The aim of this research program is primarily to characterise the metabolite profile of crops and plant-derived foods as comprehensively as possible using the established GC×GC-MS platform. The acquired metabolite profiles shall then be compared with quality parameters to obtain valuable information about the chemical basis of the quality of plant-derived foods in order to improve food quality.
