Purpose of research: Experimental development

Food scandals have sensitised customers for save food. As a result the marked for organic food products increased continuously over the last years. More and more regional produced products come to market. The EU regulated the uses labels for regional and organic products. The aim of this project is the development of analytical and chemometric methods to prove the authenticity of food. A non-targeted metobolomics approach is applied to fruit and vegetables using high-resolution-time-of-flight mass spectrometry followed by statistical analysis. The statistical methods are validated with authentic samples from Germany and other regions. The project is divided into 4 work packages. WP 1 is sample preparation and metamobolics using LC-QTOF-MS, data pre-processing and compound identification. WP 2 is the statictical data analysis. The models are tested in a targeted approach with known compounds followed of a principal compound analysis and partial least squares discriminant analysis. WP 3 is the establishment of a metabolom database with all data of WP 1 and 2. WP 4 Validation of the developed models and methods. A broader set of samples are tested.
