Purpose of research: Basic research
Project results include new products/raw materials for the beverage, bakery and confectionery sector. In particular, taste modified commodities have been developed for the areas concerned. At the same time, new applications of roasted products are made possible due to the properties of the roasted products, especially the changing hydration reactions (water absorption, moisture expansion, solubility).
