Purpose of research: Applied research

In this project, bacteriophages of lactic acid bacteria will be isolated for the first time from raw milk. Lactococcus lactis phages often survive pasteurization of raw milk and can thus be carried over into and interfere with fermentation processes, e.g. fermentations for cheese making. So far, only limited knowledge is available on these phages and this study, therefore, aims to screen for and type the phages found in raw milk. The knowledge on the biodiversity of the raw milk phages gained from this screening and typing will be utilized for the development of novel and rapid molecular detection methods.
