Purpose of research: Applied research

Public and consequently legal acceptance of the killing of day-old male chicks from hybrid laying hen lines has been changing in recent year. Current practice is expected to be ended by 2017. It is the objective of this project to identify starting points for the development and the marketing of an innovative product jointly with poultry processing companies. In the framework of the study cocks from a hybrid laying hen line, from a dual-purpose hybridline and a traditional dual-purpose breed will be raised, fattened and be evaluated to be used as meat in the production of chicken. For this end, day-old chicks will be raised under animal welfare conditions at the research station Frankenforst of the University of Bonn. During this time performance, animal welfare and animal health parameters will be monitored. A special focus is set on the behavior to achieve an evaluation within the problem of feather pecking and cannibalism. After slaughtering the different breeds will be compared regarding carcass characteristics and meat quality by the relevant parameters. In addition shelf-life and preparation losses as well as water binding capacity as crucial characteristics for the production will be analyzed. The carcasses constitute the raw material for product samples which will be transferred to selected poultry processors. Products samples will be processed to innovative poultry products and will then be used in a study for consumer acceptance which will also consider sensory characteristics. Results of the project will be distributed through the competence network of livestock research and other cooperation within a workshop.
