Sustainability is gaining more and more importance in the production, processing and marketing of food, at national and international level. This also applies to the German dairy industry and its international competitiveness. Against this background an initial concept for a so-called 'Dairy Sustainability Tool” was developed by the Thünen-Institute of Farm Economics together with the QM-Milch e.V., building on two previous sustainability projects in Lower-Saxony and Schleswig-Holstein. The 'Dairy Sustainability Tool” is a sector-specific concept for the sustainable development of dairy production in Germany. The implementation and feasibility of this concept is the purpose of this project. Partners of the joint project are the Thünen-Institute of Farm Economics (project leader), the QM-Milch e.V. and the Land und Markt project office. Around 30 dairy processors are involved in the project as practice partners. The overall objective of the project is to put the 'Dairy Sustainability Tool” in practice on a large scale for the first time, to check its feasibility and recognition at all stages of the value chain, and furthermore to develop the tool based on the knowledge gained. As a result there should be an outwardly transparent industry solution for the sustainable development of dairy production in Germany, which is suitable for a wider successful dissemination (related to the idea of open source). This solution has a technical basis (database etc.), a scientifically founded set of criteria/indicators, as well as a questionnaire for collecting these indicators. By the end of the project, a practical guide 'Sustainable Dairy Production Process” of the developed concept 'Dairy Sustainability Tool” should also be part of the project. QM-Milch e.V. will be responsible for the further development and dissemination of the concept. Through this project, the concept 'Dairy Sustainability Tool” (Dairy ST) will be widely applied in practice for the first time.
