Minimising the content of mineral oil in edible oils

Purpose of research: Applied research

The presence of compounds of mineral oils in edibles is of high importance since they are incorporated with the food and parts of the MOSH-fraction with chain lengths between C16 and C35 are accumulated in the human body. The activities in the frame of the research project concentrate on the oilseed species sunflower, canola, and linseed. The possible entries for components of mineral oil into edible oils within the production chain are poorly investigated. Presumably, these entries can be found along the whole production and processing chain meaning cultivation, preharvest treatment, harvest, cleaning, transport, drying, storage, conditioning, extraction, refinement, and filling. Therefore, the process chain will be subdivided in the sectors cultivation, seed storage, oil production, and refinement and the entry of MOH will be investigated and its relevance as contamination will be assessed. By identifying the main entries (AP2) and the possibilities to minimize its input during oil processing (AP 4-8) as well as the establishing of a robust and reliable method of analysis (AP1) it will be possible to considerably decrease the contents of MOH in edible oils and at the same time preserve the high product quality. The utilization of the research results is mainly seen in the sections of food technology and agricultural engineering.
