Purpose of research: Experimental development

Undesirable substances can reach foods through the environment or during food processing. Some examples of these substances are environmental contaminants such as dioxins and PCBs or process contaminants such as 3-MCPD or PSHs. The latter are formed during grilling and smoking processes. For the detection of these substances in this research project the methodical approaches of the residue analysis are newly or further developed. Therefore massspectrometric methods in combination with HPLC- or GC-systems are applied and optimized for detecting different substances with lower detection limits.
