Purpose of research: Basic research

Fungi can proliferate enormously under appropriate environmental conditions on food and feed partially producing harmful mycotoxins. Alternaria-toxins are produced by Alternaria species resulting in a characteristic blackening of food or feed. Alternaria are so called outdoor fungi which already grow on agriculture yields resulting on the one hand in its spoilage, on the other hand on a contamination of food and feed with these toxins. Due to its ubiquitous occurrence Alternaria can also grow on fruits and vegetables. However, the toxicological properties of Alternaria toxins are not well investigated yet. Therefore, this study shall elucidate some aspects of the toxicity of four Alternaria toxin representatives (alternariol, alternariol monomethyl ether, tenuazonic acid, tentoxin). On the one hand the oral bioavailability shall be assessed using the in vitro Caco-2 cell model, on the other hand cytotoxicity, the induction of apoptosis as well as DNA double strand breaks shall be analyzed in human liver cells (HepG2 and HepaRG cells). This project shall contribute to a better understanding and assessment of harmful effects caused by Alternaria toxins.
