In order to avoid the succession of species-rich meadows and pastures in low mountain ranges, an interdisciplinary project was carried out in the southern Black Forest region to further develop the value chain of organic pasture beef. It became clear that extensive pastures are only suita-ble to a limited extent for fattening cattle. However, organic pasture cattle producers can still achieve high economic successes, for example through high producer prices guaranteed by the retail trade and premium optimisation, thus keeping regional, nature conservation-oriented grassland areas under management. The project has doubled the number of cattle produced in the organic pasture beef value chain from 700 to 1,400 and increased the number of participat-ing farmers by 50% from 100 to 150. An adapted marketing concept with committed actors was also an important prerequisite, in which motivated independent food retailers offer special op-portunities.
