Microbiological status of meat substitute products (MBT Fleischersatz)

Purpose of research: Applied research
In an "exploratory project" with a time-limited framework of approx. 4-6 months, the microbiological safety and quality of selected meat substitute products will be investigated. Background to this is that consumers have increasingly reduced meat in recent years, which was e.g. documented also in the BMEL Nutrition Report 2020, and at the same time the supply of plant-based meat alternatives has steadily increased. It was also noted that more people have turned to meat alternatives during the Corona crisis. For example, sales of specific products were found to have increased to more than 44 percent in 2020 when compared to the previous year. Therefore, this project will screen relevant commercial alternative meat products, some of which have been highly processed and heated, to collect microbiological quality and safety data regarding the presence of foodborne pathogens, such as Listeria monocytogenes. These data will then serve as a basis for further research in this field within the framework of third-party funded or internal projects in the subject area of "alternative protein sources".
