Purpose of research: Experimental development

The aim of the project Safe-Pack was to develop novel antimicrobial packaging solutions to increase the quality, shelf life and safety of meat and meat products and to reduce losses. Therefore, intrinsically antimicrobial (SAM®) polymers were further developed for use in plastic trays, absorbent pads and foils in the meat industry. A detailed characterization of the new materials regarding their antimicrobial effect showed that even the addition of 10% poly(TBAMS) was enough to achieve an excellent antimicrobial effectiveness against a broad spectrum of spoilage and pathogenic bacteria. Even if specific product factors influenced the activity, the activity can be improved by a higher concentration of the polymer as well as by an enlargement of the contact surface. The developed concept for the assessment of the costs and benefits of the implementation of new packaging solutions as well as their impact on a sustainable food production is transferable to other antimicrobial packaging solutions. The same applies to the standardized evaluation scheme, which allows assessment of the application of antimicrobial packaging solutions for different areas. Based on the collected experiences, the know-how of the working group and the network could be enhanced significantly. For this, the intensive exchange of the interdisciplinary consortium delivers a large contribution. The results are/were published in international journals.
